Coffee: Dark Roast Catalina
This year's harvest yielded less than I would have liked. But after all was said and done, we wound up with 300 pounds of primo beans. Amazingly, considering the economy of Nicaragua and the poverty of the people who live there (many in squalor) we had 200 stolen. So, we have at this point, Nov. 6, about 60 pounds. I've developed a fine blend out of the beans. Its almost full city with a bit of American tossed in for sweetness and a raw cocoa note.
Catalina dark fresh roasted direct trade, organic coffee, is some of the best coffee in the world. We have the perfect direct trade situation. We own the farm. We monitor how the coffee is grown and processed. We receive for our customers only the best of the crop. This means we insist on lots of sorting so good beans come to our store while the “not-so-good” beans go to the corner market for those “other guys”.
We visit the Santa Catalina Farm regularly. During these times we make sure the farm is being run to our standards. We check on the workers and make sure they are well taken care of. All of the workers have sturdy housing, electricity and running water. We check on equipment and any needs for the farm to make sure this organic, direct trade coffee is the best that the farm can produce.
We then export the coffee from Nicaragua and import it in the United States where it is transferred to our store in Talent Oregon. In Talent, we have a Cafemino Coffee Roaster. Most people would think that this is the end of the process, but it isn’t. Before we roast the green beans, we sort the coffee again to make sure our customers get only the perfect beans to make the perfect Catalina Dark Blend fresh roasted organic coffee.
